(<a href=\"http:\/\/www.kashrut.com\/articles\/simanim\/\">This article does a good job explaining the background for this.<\/a>) Probably the most well known, of course, is apples dipped in honey, but there are many others that can be prepared in a variety of ways. Mrs. Varda Epstein, an <a rel=\"noreferrer noopener\" href=\"http:\/\/www.oorah.org\/\" target=\"_blank\" data-type=\"URL\" data-id=\"http:\/\/www.oorah.org\/\">Oorah<\/a> employee in Israel, goes the healthy (and original!) route and prepares salads. In a play on the Hebrew word kares\/karet, meaning cut off, many people eat karsi\/karti, Hebrew for leeks, and say a short prayer that our enemies be cut off. (\u05e9\u05d9\u05db\u05e8\u05ea\u05d5 \u05e9\u05d5\u05e0\u05d0\u05d9\u05e0\u05d5)<\/em><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1 quart water<\/li><li>1\/2 cup dry white wine<\/li><li>1\/2 lemon<\/li><li>2 whole cloves<\/li><li>1\/2 tsp. salt<\/li><li>10 whole peppercorns<\/li><li>2 sprigs parsley<\/li><li>10-12 thin leeks, trimmed of green tops, washed (<a rel=\"noreferrer noopener\" href=\"https:\/\/www.star-k.org\/checking\" data-type=\"URL\" data-id=\"https:\/\/www.star-k.org\/checking\" target=\"_blank\">Star-K guidelines on checking leeks for bugs<\/a>)<\/li><li>1 small clove garlic, minced<\/li><li>1\/2 tsp. coarse (kosher) salt<\/li><li>4 tsp. Dijon mustard<\/li><li>1 tsp. lemon juice<\/li><li>3 Tbsp. red wine vinegar<\/li><li>1\/2 cup olive oil<\/li><li>1\/4 cup vegetable oil<\/li><li>Chopped chives<\/li><\/ul>\n\n\n\n<p>Combine the first seven ingredients in a large saucepan. Heat to boiling; reduce heat. Simmer for 5 minutes. Add leeks; return to boiling; reduce heat. Simmer, covered, until tender, about 10 minutes. Drain the leeks and transfer them to a shallow serving dish.<\/p>\n\n\n\n<p>In a medium bowl, mash the garlic with the coarse salt, using the back of a spoon. Stir in the mustard, lemon juice and vinegar. Whisk in both oils. Pour the dressing over the leeks.
