Join Oorah&#8217;s Hamantash Fest! Send us pictures of your baking, your favorite recipes, and let us know your favorite variation.<\/p>\n<p>To kickoff the Hamantash Fest, we turn to everyone&#8217;s favorite kosher recipe site for this week&#8217;s roundup! <a href=\"http:\/\/www.kosher.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Kosher.com<\/a> has many <a href=\"http:\/\/www.kosher.com\/search\/recipes?k=hamantashen\" target=\"_blank\" rel=\"noopener noreferrer\">hamantash recipes<\/a>, from traditional to creative to gourmet, and even&nbsp;gluten free. We chose the <a href=\"http:\/\/www.kosher.com\/recipe\/1357\/mix-and-match-hamentaschen\" target=\"_blank\" rel=\"noopener noreferrer\">Mix and Match Hamantashen<\/a>, a flexible recipe by Eileen Goltz, with lots of different options to please all palettes. Pick a dough, pick a filling and enjoy!<\/p>\n<p><strong>Hamantash Dough #1:<\/strong><\/p>\n<ol>\n<li>&nbsp;1\/2 cup butter or margarine<\/li>\n<li>1 cup sugar<\/li>\n<li>1 egg<\/li>\n<li>2 cups flour, plus more for rolling out<\/li>\n<li>2 tsp baking powder<\/li>\n<li>2 tbsp milk, soy milk, or water<\/li>\n<li>2 tsp vanilla, or 1 tbsp lemon zest<\/li>\n<\/ol>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>\n<div>\n<p>In a bowl cream together the butter and sugar.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Mix in the egg.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Sift the flour and baking powder together, and then&nbsp;add the flour mixture to the creamed mixture in thirds alternating with the milk or water and vanilla, ending with the flour.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Let the dough rest for at least 10 minutes before rolling it out on a lightly floured surface.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Roll dough out to a quarter-inch thick. Cut into rounds and place a heaping spoonful of filling in the center of the round. Pull up the sides to form a triangle.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Bake at 375 degrees Fahrenheit for 15\u201330 minutes until lightly golden brown.<\/p>\n<p>Yields 2-3 dozen<\/p>\n<\/div>\n<\/li>\n<\/ol>\n<p><strong>Hamantash Dough #2:<\/strong><\/p>\n<ol>\n<li>3 eggs<\/li>\n<li>1 cup oil<\/li>\n<li>1 cup sugar<\/li>\n<li>2 tsp baking powder<\/li>\n<li>1\/2 cup water<\/li>\n<li>1\/2 cup orange juice<\/li>\n<li>1\/8 tsp salt<\/li>\n<li>4 cups flour<\/li>\n<li>1 egg beaten, for top<\/li>\n<\/ol>\n<p><strong>Instructions:<\/strong><\/p>\n<section class=\"step\">\n<div class=\"step__content\">\n<ol>\n<li>\n<div>\n<p>In a bowl combine the eggs, oil, sugar, water and orange juice. Whisk to combine.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Add the flour, salt and baking powder and fold it in; do not over-mix. This will be a soft dough.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Let sit for 10\u201315 minutes.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Divide dough into three parts. Roll out to about a quarter-inch thick on a floured surface. Cut into rounds and place a heaping spoonful of filling in the center of the round. Pull up the sides to form a triangle.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Brush the top of the filled hamentashen with the beaten egg.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Bake on a lightly greased (or use parchment paper) baking sheet at 350 degrees Fahrenheit for 20\u201325 minutes or slightly longer until golden brown.<\/p>\n<p>Yields 1.5- 2 dozen<\/p>\n<\/div>\n<\/li>\n<\/ol>\n<\/div>\n<\/section>\n<section class=\"step\">\n<h3 class=\"step__title\"><strong>Filling options:<\/strong><\/h3>\n<\/section>\n<p><strong>#1 Brownie Filling:<\/strong><\/p>\n<ol>\n<li>5 oz semisweet chocolate<\/li>\n<li>3 oz unsweetened chocolate<\/li>\n<li>6 tbps butter or margarine<\/li>\n<li>2\/3 cup flour<\/li>\n<li>1 tsp[ baking powder<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>2 eggs<\/li>\n<li>2 tsp vanilla<\/li>\n<li>1 tbsp instant coffee<\/li>\n<li>3\/4 cup sugar<\/li>\n<li>3\/4 cup semisweet chocolate chips<\/li>\n<li>1\/3 cup chopped pecans<\/li>\n<li>1\/3 cup chopped walnuts<\/li>\n<\/ol>\n<p><strong>Instructions:&nbsp;<\/strong><\/p>\n<ol>\n<li>\n<div>\n<p>In a glass (microwavable) bowl melt the margarine, semisweet chocolate and the unsweetened chocolate together.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Mix in the flour, baking powder, salt, eggs, vanilla, coffee and sugar.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Fold in the chocolate chips and nuts.<\/p>\n<\/div>\n<\/li>\n<\/ol>\n<p><strong>#2 Raspberry&nbsp;Filling:<\/strong><\/p>\n<ol>\n<li>1 1\/2 cups raspberry jam<\/li>\n<li>1 raspberry per hamantash<\/li>\n<li>1\/2 cup chopped toasted almonds<\/li>\n<li>1\/4 cup bread crumbs<\/li>\n<\/ol>\n<p><strong>Instructions:<\/strong>&nbsp;In a bowl combine the jam, nuts and breadcrumbs.&nbsp; Use a teaspoon or tablespoon for filling, and just before cooking place a fresh raspberry in the open part of the hamentashen.<\/p>\n<p><strong>#3 Apricot or Prune Filling:<\/strong><\/p>\n<ol>\n<li>1 pound dried apricots or pitted dried prunes<\/li>\n<li>water to cover<\/li>\n<li>1 cup sugar<\/li>\n<\/ol>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>\n<div>\n<p>Take a pound of dried fruit, either apricots or prunes, and put them in a saucepan to cover with water and set them on the stove to cook until the water is almost gone. Don\u2019t let the water; evaporate it will burn. You can add more water if needed and the fruit is not soft and mushy.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>At this point add the sugar and continue cooking on a low temperature until the sugar is totally melted, 3\u20134 minutes.&nbsp;Remove from heat and let cool until room temperature.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Using a food processor or blender process until smooth.<\/p>\n<\/div>\n<\/li>\n<\/ol>\n<p><strong>#4 Dried Fruit and Nut Filling:<\/strong><\/p>\n<ol>\n<li>1 cup dried figs<\/li>\n<li>1\/2 cup dried apricots<\/li>\n<li>1\/2 cup raisins<\/li>\n<li>1\/2 cup orange juice<\/li>\n<li>1\/3 cup toasted slivered almonds<\/li>\n<li>1\/3 cup walnuts<\/li>\n<li>1\/4 cup corn syrup<\/li>\n<li>1\/2 tsp vanilla<\/li>\n<li>1\/2 tsp cinnamon<\/li>\n<li>zest of 1 lemon<\/li>\n<\/ol>\n<p><strong>Instructions: <\/strong>Place all the ingredients in a food processor and process for 2\u20133 minutes until combine but not totally pulverized. Should be chunky.<\/p>\n<p><strong>#5 Strawberry Filling:<\/strong><\/p>\n<ol>\n<li>2 cups sliced strawberries<\/li>\n<li>1 tsp cinnamon<\/li>\n<li>1\/4 cup brown sugar<\/li>\n<\/ol>\n<p><strong>Instructions: <\/strong>In a saucepan combine all the ingredients and cook at a medium heat for about 15 minutes until the sugar dissolves and the mixture thickens. Remove from heat and cool completely.<\/p>\n<p><strong>#6 Prune- Raisin Filling:<\/strong><\/p>\n<ol>\n<li>1 1\/4 cups dried pitted prunes<\/li>\n<li>3\/4 cup raisins<\/li>\n<li>water or prune juice to cover<\/li>\n<li>2 tbsp sugar<\/li>\n<li>zest of 1 lemon<\/li>\n<li>1\/2 tsp cinnamon<\/li>\n<li>pinch ground cloves<\/li>\n<\/ol>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Place the prunes, raisins, sugar, lemon zest, cinnamon and cloves in a saucepan and add water or prune juice just to cover. Bring the mixture to a boil, turn off the heat and let stand for 30 minutes<\/li>\n<li>\n<div>\n<p>Place the mixture in a food processor and process to a slightly chunky paste.<\/p>\n<\/div>\n<\/li>\n<\/ol>\n<p><strong>#7 Lemon Curd Filling:<\/strong><\/p>\n<ol>\n<li>3\/4 cup sugar<\/li>\n<li>2 tbsp corn starch<\/li>\n<li>1\/8 tsp salt<\/li>\n<li>3\/4 cup cold water<\/li>\n<li>2 egg yolks beaten<\/li>\n<li>juice of 1 1\/2 lemons<\/li>\n<li>2 tsp lemon zest<\/li>\n<li>1 tbsp butter or margarine<\/li>\n<\/ol>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>\n<div>\n<p>In a small saucepan, combine sugar, cornstarch and salt. Whisk to combine.&nbsp;Whisk in the water and eggs. Whisk in the lemon zest and lemon juice.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Cook over medium heat, whisking constantly until the mixture is thick and bubbly. Boil approximately one minute and then remove from heat.<\/p>\n<\/div>\n<\/li>\n<li>\n<div>\n<p>Stir in the butter, cover with wax paper and let cool to room temperature.&nbsp;Refrigerate until ready to use.<\/p>\n<\/div>\n<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This Sunday marks the month of Adar, and that means Purim, and hamantashen of course!
