Enjoy the last licks of summer while you still can!<\/p>\n\n\n\n

Ice Cream<\/h3>\n\n\n\n

6<\/strong> egg whites (pasteurized)<\/p>\n\n\n\n

1\/2 cup<\/strong> sugar<\/p>\n\n\n\n

2 (10-ounce) cartons<\/strong> whip cream or 20 ounces<\/strong> Whipped Topping<\/p>\n\n\n\n

Crunch 1<\/h3>\n\n\n\n

1\/2 pound<\/strong> baking chocolate<\/p>\n\n\n\n

2 tablespoons<\/strong> Crunchy Peanut Butter<\/p>\n\n\n\n

3 cups<\/strong> cornflakes (use gluten-free if needed)<\/p>\n\n\n\n

1\/2 cup<\/strong> pecans, ground and roasted<\/p>\n\n\n\n

1\/2 cup<\/strong> ground coconut (optional)<\/em><\/p>\n\n\n\n

Crunch 2<\/h3>\n\n\n\n

7 ounces <\/strong>truffle-filled chocolate<\/p>\n\n\n\n

1\/3 cup<\/strong> Peanut Butter<\/p>\n\n\n\n

1\/2 cup<\/strong> slivered almonds<\/p>\n\n\n\n

2 and 1\/2 cups<\/strong> rice crispies, crushed (use gluten-free if needed)<\/p>\n\n\n\n

Prepare the Ice Cream<\/h3>\n\n\n\n

Beat egg whites and sugar until stiff. Set aside.<\/p>\n\n\n\n

Beat whip cream until peaks form. Combine with beaten egg whites, mixing gently.<\/p>\n\n\n\n

Freeze.<\/p>\n\n\n\n

Prepare Crunch 1 or 2<\/h3>\n\n\n\n

Melt desired chocolate and peanut butter.<\/p>\n\n\n\n

Add remaining ingredients, mixing well.  Spread onto lined cookie sheet and set aside to harden.<\/p>\n\n\n\n

When crunch is hardened, chop in processor.<\/p>\n\n\n\n

Mix half of crunch into semi-frozen ice cream and spread remaining half on top. <\/p>\n\n\n\n
