This recipe, which tastes as good as it sounds, is a contribution from Mrs. Ella Finkel, a former employee of Oorah. These can be made dairy or pareve so you can enjoy them anytime!

Ingredients:

1 8-oz package of cream cheese (substitute with soy-based Tofutti cream cheese for pareve version)
2 eggs
1 1/2 cup sugar
1/8 teaspoon salt
½ teaspoon salt
1 ½ cups chocolate chips
1 ½ cups sifted flour
¼ cup cocoa
1 cup water
1/3 cup oil
1 Tbsp. vinegar
1 tsp. vanilla extract
1 tsp. baking soda

In a small bowl, combine cream cheese, eggs, 1/2 cup sugar, and 1/8 tsp salt. Mix with an electric mixer. Add chocolate chips.

In a medium bowl, combine flour, remaining 1 cup sugar, cocoa, 1/2 tsp salt, water, oil, vinegar, vanilla, and baking soda. Beat until smooth.

Insert paper liners in cupcake pans and fill until 1/3 full with batter. Top with 2-3 teaspoons of cheese mixture. Bake at 350 degrees for approximately 30 min.
