Pancakes

1 pound farmer cheese

4 eggs

1 cup flour

1/3 cup sugar

1/2 cup milk

Cinnamon Swirl

4 tbsp brown sugar

2 tbsp maple syrup

1/2 tsp cinnamon

Cream Cheese Glaze

3 oz whipped cream cheese

2 tbsp maple syrup

2 tbsp confectioner’s sugar

Prepare the Pancakes

  1. In a medium bowl, combine farmer cheese with eggs, flour, sugar, and milk, and mix to combine.
  2. Heat a large frying pan over medium–high heat. Spray with nonstick cooking spray.
  3. Prepare the cinnamon swirl. In a small bowl, combine brown sugar, maple syrup, and cinnamon, and mix well. Set aside.
  4. Using a spoon to scoop the batter, place two tablespoons of the pancake batter in the frying pan, and cook for one minute. At this point the pancake should just begin to set.
  5. Take your cinnamon swirl; starting from the center of the pancake, slowly swirl some of the filling into the pancake.
  6. Cook for an additional two minutes, or until bottom is golden brown. Flip over. Cook for another 30 seconds.
