Enjoy this yummy and wholesome soup all winter long. Submitted by Mrs. Sarah Feldman, TorahMates coordinator, it’s the perfect soup for the cold nights.

Ingredients

  • 3 Carrots grated
  • 3 Zuccini grated
  • 2 Rutabaga
  • 2 parsnip
  • 2 sweet potato
  • 2 onions chopped
  • Butternut squash
  • Piece of pumpkin
  • Whole bunch of celery chopped
  • Bulb of garlic chopped
  • Himalayan salt
  • Coarse black pepper
  • Turmeric
  • Garlic and herb spice
  • Italian spice
  • Optional: Fresh dill
  • Optional: 1/2 cup oats

Instructions

  1. Saute the onion and celery.
  2. When well cooked and fragrant add the garlic and saute until soft and beige brown but not burnt.
  3. Cube the other veggies with alligator or dice them into small squares.
  4. Combine and saute for a few minutes.
  5. Add water to cover and then some. The less water, the thicker the soup.
  6. Season w Himalayan salt and spices. Fresh dill adds a wonderful flavor.
  7. To thicken, add oats.
