This recipe, a recent concoction of hers, is perfect for those nights when you have few ingredients in your pantry and little time left until dinner but still want to serve something “warm and welcome.” With temperatures so low these days, your family will be happy to be served up a bowl of steaming hot and filling soup.

Ingredients:

1 large Spanish onion
olive oil
3 Idaho potatoes, peeled and diced
2 sweet potatoes, peeled and diced
1 cup carrots, chopped
1 cup lentils
4 cubes frozen garlic
1 cube frozen cilantro
salt and pepper

Saute onion in olive oil until translucent. Add vegetables and spices and cover with vegetable stock or water, bringing to a boil. Simmer on medium for 20 minutes(!) and adjust seasoning. Blend with immersion blender and serve with a truckload of crackly, buttered baguettes.
