raspberry streusel bars

Great for snacking on Shabbos afternoon and definitely something to keep in your cookie jar! Recipe courtesy of Atara Tewel.

Dough:
3 cups flour
3/4 cup brown sugar
1/2 cup white sugar
3/4 cup oil
1 cup oats
2 tsp. baking powder
pinch salt
3 large or 2 extra large eggs

Filling:
Raspberry jam (preferably seedless)
2 handfuls of chocolate chips
coconut

Mix all ingredients to form dough. Press half the dough into a 10×15 baking pan lined with parchment paper. Bake at 350F for 12 minutes. Spread jam (you may need to soften first in the microwave or mix with a little hot water) to cover the crust. Sprinkle with chocolate chips and coconut. Crumble remaining dough on top. Bake for an additional 20 minutes. Cool slightly and cut into squares.
