this recipe
 makes 2 dozen large cookies.

Ingredients:

1 cup (2 sticks) margarine, at room temperature
1 1/2 cups dark brown sugar
3 Tbsp. honey
2 eggs
1 1/2 cups all-purpose flour
1 Tbsp. cinnamon
1 tsp. salt
4 cups old-fashioned rolled oats (NOT quick-cooking oatmeal)
3 cups roughly chopped moist dates

Preheat oven to 375° F. Line 3 cookie sheets with baking parchment paper.

Cream margarine and brown sugar in large bowl. Beat in honey and eggs until mixture is smooth.

Sift flour, cinnamon, and salt together. Stir into creamed mixture with a wooden spoon. Add oats and chopped dates. Stir until well combined.

Shape dough into 2-inch balls, flattening with your palm on the cookie sheet. Bake until light brown, around 15 minutes. As soon as you take the cookies out of the oven, use a spatula to carefully place on wire racks to cool.

    I fully agree with Donna.
    However, trying Miriam’s advice, I might suggest substituting for the flour, one could try soy flour, white-bean or black-bean flour, or almond meal.
    One can substitute unsweetened applesauce for sugar and oil, or avocado puree, or bananas.
    Ground flaxseed mixed with water or chia seeds will substitute for eggs.

    Please remove the word “healthy” from the description of this recipe. There is nothing healthy about any recipe that uses white flour (even unbleached,) sugar, margarine and eggs. I would call them “Inflammation Cookies!”

      You can probably adapt it to make them healthier, the sugar may not even be necessary as there are a lot of dates. Hope they work out for you if you do try to adapt them! Many people use the word “healthy” as applies to them please don’t take it personally.

      Other than the margarine which is admittedly not a good choice nut you can certainly substitute earth balance, there is nothing inherently UNhealthy about white flour, sugar, or for that matter, eggs!! In fact, current research shows that eggs may have an undeserved bad rap even on the cholesterol front, as the cholesterol in eggs has been found to NOT impact per se on blood cholesterol levels!
