Make this in mini or regular muffin size, either way they’re a delicious treat.

Ingredients:

4 cups flour
1 1/2 cups sugar
4 tsp. baking powder
1/2 tsp. salt
4 eggs
1 cup oil
2 tsp. vanilla
1 cup orange juice or soy milk
1 cup frozen cranberries
1 cup frozen blueberries

Preheat oven to 350F. Combine dry ingredients. Beat eggs. Add liquids and sugar and mix until well blended. Add to dry ingredients and mix well. Fold in fruit.

Bake in mini muffin tins for 10-12 minutes or in regular muffin tins for 20-30 minutes. Don’t forget to spray the tins!
