Ingredients:

4 tilapia or salmon fillets
head of garlic
2-3 tomatoes
1-2 red peppers
1-3 hot peppers
oil
coriander
paprika
garlic powder
salt
pepper
fish spice

Combine oil and spices and marinate fish in the mixture. Crush the garlic and saute. Add red peppers, sliced or diced. Make an X on the top and bottom of the tomatoes. Let them sit in steaming hot water for 4 minutes to make it easier to peel them. Add peeled, sliced tomatoes to the garlic and peppers. Depending on how much heat you can handle, add 1 to 3 hot peppers, heads cut off. Add paprika, salt, pepper, coriander and fish spice, to your taste. Let everything sit in the frying pan until all the tomatoes have dissolved into the sauce. Add fish fillets and cook for 15-20 minutes.

Optional:
Slit the hot peppers and stick garlic slices inside. Add whole garlic pieces to the pan for additional flavor. moroccan salmon
