It’s definitely soup weather now. Piping hot and delicious, this will keep you warm on the snowiest of days.

Ingredients:

6 onions, sliced
2 tsp salt
1 tsp pepper
1/2 cup dry red wine
8 cups boiling water
2-4 Tbsp oil
2 Tbsp flour or oat bran
Optional: 1/4 cup onion soup mix

Sauté onions until golden. Add salt, pepper, flour and soup mix, if using. Sauté a few more minutes. Add wine and water; cook thirty minutes more.
Serve with croutons and/or grated cheese.
